Pizza Alla Ollie

This genius idea comes from my friend Jenny who is an amazing cook!  She makes this pizza for her two- year old son Oliver but I promise adults will love it as well.  I was at her house visiting when she whipped up one of these for her toddler and I found myself literally stealing slices off his plate when he wasn’t looking!  Not my proudest moment- taking food from a baby- but man is this stuff yummy!  Perfect for a quick meal, it couldn’t be easier to make.  Get creative with toppings or just serve it with cheese.  When you’re craving pizza, this will certainly hit the spot!

Pizza Alla Ollie

Servings: 1 small pie

Ingredients:

1 pita bread round

about 2 Tablespoons pizza sauce (can also use marinara, tomato or even pesto)

about 1/4 cup shredded mozzarella cheese

any additional optional toppings  (veggies, pepperoni, sausage, mushrooms, herbs, etc)

Directions:

Preheat oven to 500 degrees

Place pita bread on a cookie sheet or in small omelette pan (as shown above.)

Top with pizza sauce and sprinkle with cheese.

Add any addition toppings.  (For my pizza pictured, I added some cooked sausage to the top)

Place in the oven and cook for 5- 10 minutes until cheese is bubbling and starting to brown just a touch. (Keep an eye on this- it will cook fast!)

Take out of oven, and slice like a pie. Serve hot.

*You can also make these in the toaster oven.

    Jessica, I love your character Avery….and your food looks amazing! DOing the apple bourbon crisp for Thanksgiving in place of apple pie…will let you know how it turns out! (p.s….been doing the pizza trick for years! If you add riced cauliflower to the shredded dmozzarella, it melts in for an extra kick of nutrish….and the kids never know it! 🙂 )
