PILGRIM'S PIE


 

If you’ve followed my holiday cooking over the years, you already know this is my favorite thing to do with all the leftovers. Think “Turkey Shepherd’s Pie”… layering whatever you’ve got from the previous night’s feast into a baking dish, topping with mashed potatoes, then baking in the oven. My family looks forward to this day-after meal as much as they do the actual Thanksgiving dinner!

Pilgrim’s Pie

Use whatever leftovers you’ve got: turkey, stuffing, mashed potatoes, veggies, gravy, even the cranberry sauce if you like.

Directions

1. Preheat oven to 350º.

2. Grease a baking dish with butter or non-stick spray. (Choose whatever size baking dish will accommodate the size of your leftovers. (If I use a 9x13 baking dish, I get about 8-10 good size servings out of that.)

3. Chop up turkey meat into bite size pieces.

4. Layer leftovers, one by one, into baking dish. (I like to begin with the stuffing to give it a nice base.) Add remaining layers and top with mashed potatoes.

5. Bake for about 20-30 minutes- until hot all the way through. Let the potatoes brown a little on top. If they start to brown too much before the dish is completely heated, cover with foil for the remaining time.
