Pantry Challenged: 4-INGREDIENT BROCCOLI AND SAUSAGE PASTA


 

This meal is such a winner with my family and the whole dish can be thrown together in about 15 minutes.

Lots of substitution ideas below, and you could even replace the tomato sauce with olive oil which will bring out the flavor of the sausage and broccoli even more.

4-Ingredient Broccoli and Sausage Pasta

Serves 8

 

Ingredients

1 Tablespoon olive oil

1 lb sweet Italian pork sausage (you can also use Italian hot pork, any turkey or chicken sausage)

About 4 cups tomato sauce (use your own, or a jar, or my 3-Ingredient Spaghetti Sauce )

1 lb pasta of your choice

2 bunches of broccoli rabe, cut into 2-inch pieces and discard the stems (regular broccoli florets will work just fine too)

salt and pepper, to taste

Optional: grated parmesan cheese to top over finished pasta

 

Directions

Remove sausage from casing.

In a large sauté or saucepan, heat olive oil over medium/high heat for 1 minute, then add sausages and sauté until cooked through, breaking up sausage with a spoon into bite sized pieces or smaller during cooking. When cooked through, add tomato sauce, bring to a simmer, then reduce heat to low.

Cook pasta according to pasta directions. 2 minutes before pasta is finished cooking, add broccoli rabe to boiling pasta water and cook with the pasta.

Drain pasta and broccoli, and add to tomato/sausage pan. Season with salt and pepper to taste.

Mix well and serve hot.

Optional: sprinkle finished pasta with grated parmesan cheese
