Mother's Day BANANA CHOCOLATE CHIP MUFFINS


 

Here’s a wonderful Mother’s Day breakfast/brunch goodie that kids can make for Mom on her special day. My daughter loves smashing the bananas and, of course, sneaking way too many chocolate chips. xoxo

Banana Chocolate Chip Muffins

Makes 12 muffins

 

Ingredients

2 cups flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

3 large, very ripe bananas

3/4 cup brown sugar (can sub with white sugar)

1/2 cup (1 stick) unsalted butter, melted (salted butter will also work)

2 eggs

1 teaspoon vanilla (omit if you don’t have)

1 cup chocolate chips (you can omit these if you don’t want or have, or also sub with nuts, dried fruit or shredded coconut)

 

Directions

Preheat oven to 350 degrees.

In a medium bowl, combine flour, baking powder and salt and set aside.

In a large bowl, mash bananas (I like to leave some chunky bits) and stir in sugar and melted butter. Once mixed, add eggs and vanilla and mix just until combined. Slowly add flour mixture stirring just until all is well blended (don’t overmix.) Fold in chocolate chips.

Grease a 12-cup muffin pan or use cupcake liners and spoon batter evenly into each cup.

Bake for about 25-30 minutes just until tops are light golden brown and a toothpick comes out clean from center.

Serve warm or room temperature.
